Hello lovely people and merry Christmas Eve! I hope you are all ready for the big day and full of mince pies and merriment. I have been loving sitting by the fire, wrapping presents and binge watching Christmas films these last few weeks, or maybe month? Or two months... I'm one of those gets excited in October kind of gals. Today's post is dedicated to Boxing Day when you have all the left over bits from Christmas day and have no inspiration to do anything with them. Or if you are having people over and you want to create some treats for your friends and family.
You can't go wrong with goats cheese and caramelised onion as the sweetness from the onions cuts through the sourness of the goats cheese. Pop them in some puff pastry and heat up and you have yourself one very tasty mouthful. You'll want to serve them warm as the goats cheese is soft and warm however having them cold is just as good. Added bonus they take no time to make so you can enjoy the day stress free!
Goats Cheese and Caramelised Onion Puff Pastry Tarts
(makes 24)
500g Ready To Use Puff Pastry
50g Goats Cheese
1 Red Onion
3 Tbsp Brown Sugar
100ml Water
1 Egg
Preheat the oven to 180 C, Gas Mark 4.
Grease two shallow cupcake tins with butter.
Cut the onion into small slices and then place in a pan on a high heat. Fry the onions off until they start to brown and then add the water and brown sugar. Continue to cook on a high heat until the water stars to boil. Turn the heat down and simmer for 5 minutes until the water has reduced and the onions have turned a golden brown colour.
Roll out the pastry to approx 1/4 cm thick. Using a medium size cookie cutter cut out the pastry and then place in the cupcake tin making sure you push in the middle. Repeat until you run out of pastry, this should make roughly 24 mini tarts.
Brush with an egg wash and place in the oven to start cooking for 7 minutes. Take them out of the oven and make a hole in the middle with a sharp knife. Equally place the goats cheese inside the puff pastry and then top with the caramelised onions. Place back in the oven for a further 7 minutes until the pastry has turned golden brown and the goats cheese has melted.
Enjoy straight out of the oven or cold either are just as yummy!
