Pancake Day Options

With pancake day in just a matter of days it can be tough to know what to do to make your pancakes a little more exciting. Don't get me wrong nothing beats the classic lemon and sugar or bacon and maple syrup for american style pancakes but sometimes you just want something that makes your friends go wow. So I've done the hard work for you and scouted the internet to find some interesting recipes and ideas that will help with your pancake blues!

For the sugar conscience amongst us these sugar free blueberry pancakes from Your Sunny Side Up are perfect as they contain no refined sugars and are naturally sweetened with blueberries and dates. They look so fluffy and light, added with the blueberry syrup they really would make the perfect breakfast treat.

If, like me you are a huge fan of anything Bakewell or cherry then you will love these pancakes! These Bakewell tart pancakes by Emily's Recipes and Reviews, look so elegant and classic but pack a flavourful twist. I love the use of the cherry jam as it is easy to get hold of and saves you making your own. I also love how Emily has made almond sugar to give them that true Bakewell flavour!

If you're looking for something really indulgent this year then these 'Marzipancakes' with blueberry maple syrup and toasted coconut by Cate in the Kitchen will be right up your street! Using a traditional pancake mix with grated marzipan thrown in, what's not to love? Put together with a helping of blueberry compote and toasted coconut, I like to think of this as the grown up pancake. Cate also has a great savoury pancake recipe that you should try out too!

These apple and oatmeal pancakes by Jess and Josh give a little texture to american style pancakes. I think the apple sauce is a great addition as it adds natural sweetness to the pancakes, and the oats give them added texture making them great for a breakfast treat!
