Melted Monster Marshmallow Squares


I have another Halloween recipe for you, and this time it's melting monsters. Making your own marshmallow squares is so easy and quick! This was my first time making them and I was surprised at how little time they took to make, I was eating one within an hour and a half. As Halloween is only a day away, these melting monsters make the perfect quick treat if you haven't managed to get to the shops yet!

I went for blue and orange colouring for my monsters, however you can use whatever colours you want. Halloween is about having fun so go crazy and get creative, give your monsters three eyes or one eye... Monsters are of course, the scariest creatures of all.

Monster Squares
(Makes 12)
3 Tbsp Butter
400g Rice Krispies
200g Mini Marshmallows

350g Icing Sugar
Food colouring of your choice
24 Chocolate Drops

In a large saucepan melt the butter over a low heat. Add in the marshmallows and stir until completely melted. Remove from the heat.

Add the rice krispies to the saucepan and stir until well coated. Using a spatula, evenly press the mixture into medium size brownie or tray bake tin. Leave to cool for one hour before cutting into 12 rectangles.

I used two sets of icing to make my monsters different colours, however you can just make one colour using the same method. Place 150g of icing sugar into a small mixing bowl, add two tablespoons of water and stir. Keep adding water until you get a thick, just pouring mixture. Then add in the food gel/colouring and mix until well combined. Repeat this step if you are using two colours.

With the remaining 50g of icing sugar, add one tablespoon of water and stir. Again add more water if needed to get that thick just pouring consistency.

Place all of the icings in separate disposable piping bags and snip the ends. Pipe the icing on the top half of the marshmallow square, allowing it to drip down the sides and down the front of the square to create a melting effect.

Once you have covered all of the squares, leave them to set for half an hour to an hour. With the white icing, pipe two dots for the eyes and then place two chocolate drops on top. You could go for three eyes to mix it up and create more monsters.

Repeat until all the monsters are completed.

These will keep in an air tight container for three days.
