Party Ring Cupcakes ✌🏻

Party rings are such a childhood classic for me that I couldn't resist turning them into one of my many cupcake creations.  I remember having party rings at well, parties. As a seven year old girl they were my go to at any snack table at a friends party. I think back then it was just because they were sweet and it was an excuse to eat pudding before dinner. Now, their pastel colours please me immensely. Of course I still love them now and actually they make a good tea dunker.

In true cupcake creation style I used a vanilla cupcake for this recipe and used strawberry frosting on top to represent a party ring! I then placed a large party ring on top and thus hello sweet perfection.

Party Ring Cupcakes 
(Makes 12) 

125g Self Raising Flour
125g Caster Sugar
125g Butter
1/4 TSP Bicarbonate of soda
2 Eggs
1 1/2 TBSP Whole Milk
1/4 TSP Vanilla Extract

Decoration
1 Tub of ready made Strawberry frosting
12 Party Ring Biscuits

Preheat the oven to 170℃, Gas Mark 4.

Line a cupcake tin with 12 cases.

Place all of the cupcake ingredients inside a large mixing bowl and whisk together using an electric hand mixer until well combined and smooth. This should take around three to four minutes.

Equally distribute the mixture between the cupcake cases filling them three quarters of the way full.

Place the cupcakes in the oven for 18 - 20 minutes until golden brown or if a cake tester comes out clean.

Once cooked leave the cupcakes to cool in the tin for five minutes before transferring onto a cooling rack and leave to cool completely.

Whilst the cupcakes are cooling place the strawberry frosting into a piping bag with a large round nozzle attached.

When the cupcakes are cooled place the piping bag in the middle of the cupcake and squeeze down allowing for the frosting to create a circle on top of the cupcake. Repeat this step until all the cupcakes are covered.

Place one party ring on top of the frosting - you will need to push it down slightly into the frosting so that it stands upright.
