I know it's August and technically we are still in summer, but lets be serious here, it's legit not stopped raining all month. I actually reached for my fluffy PJ bottoms the other day... which made me really ready for the colder months and dare I say it Autumn.

When it's cold and your bed is the only thing you need in life, I always crave a stodgy, sweet pudding. That's where this golden syrup loaf comes in. It's sweet, wholesome and perfect warm with thick custard and an extra drizzle of golden syrup.

So, if like me, your sick of the so called summer weather and your hella ready to don your fluffy PJs and eat puddings that leave a smile on your face, then this loaf is for you.

Golden Syrup Loaf 

(Makes One Large Loaf) 

150g Butter
125g Golden Syrup 
75g Soft Dark Brown Sugar 
175g Plain Flour 
1 TSP Baking Powder 
1/2 TSP Bicarbonate of Soda 
2 Eggs 
125ml Milk 

Preheat the oven to 160℃, gas mark 3. 

Line a 900g loaf tin with grease proof paper. 

Melt the butter and golden syrup together on a low heat. Once melted add in the sugar and whisk together until the sugar has dissolved. Leave the mixture to cool slightly. 

In a separate bowl, stir the flour, baking powder and bicarbonate of soda together. 

Once the golden syrup mixture has cooled slightly stir in the eggs and milk and whisk together until well incorporated. 

Pour the mixture into the dry ingredients and whisk together until smooth. 

Pour the cake mixture into the prepared tin, levelling it out with a spatula. 

Place the tin into the oven and bake for around 50 minutes. 

Once cooked leave the loaf to cool in the tin completely. 

Cut the loaf into slices when serving and pour over some golden syrup.
