It has become apparent that it was minus figures at my house this week as mum and dad lit the first fire of Autumn/Winter 2014. I came down to the comforting sight of flickering flames against the stained window of the fire, the same fire you hope is lit when you walk in from the cold. However, I was a little disappointed at this as September is still holding on to the sun with a lose grip and the sight of the fire just makes me think "oh god, winter is on its way."
With Winter fast approaching I cant hide the fact that I am getting excited for dare I say it Christmas already. I have planned out in my head little ideas for presents for my ever expanding family and friends, I've planned out Christmas bakes and desserts, Its kind of tradition to help with the dinner in the Harris household, so as we are on the subject of Christmas and the fact I just cant help myself from being excited I made some cookies.
Cookies and milk for me scream out all things festive. Its something you leave for Father Christmas, Ok not so much the older generations here but since having kids around I cant help but feel excited for them as they leave all the things for Santa and his reindeer's.
I've fell out of love with cookies lately, the last few times ive bought them home expecting them to be soft and gooey and they actually turn out to be hard is a disappointment. For me they should be soft and soak up the cold milk as you dunk it, it should be moist and (mouth waters whilst thinking about warm cookies) warm! So whats not better than making your own that you can enjoy straight from the oven!

Mixing bowl
Wooden Spoon
Greaseproof Paper
Baking Tray
Ingredients Makes 12 Medium Sized Cookies
125g Butter
125g Light Brown Sugar
125g Caster Sugar
1 Egg
1 Tsp Vanilla Exract
225g Self Raising Flour
Pinch of salt
150g Smarties
1. Preheat the oven to 180 degrees and line your tray with greaseproof paper.
2. Cream the butter and both sugars together, once combined mix in the egg and vanilla extract.
3. Sift in the flour and salt and then add the smarties.
4. Once the smarties have been incorporated into the cookie dough, roll into small golf sized balls and place on the tray, I only put a few balls on and spread them around as from previous experience I normally come out with one big cookie rather then lots of little ones. So spread them out around the tray!!
5. Pop in the oven for around 8 minutes, when they are still full of gooey goodness and just starting to brown around the edges. Leave to cool for a minute on the tray before transferring them onto a wire rack.
So grab yourself a glass of milk, take a warm cookie and be transported to festive times.
