When life gives you bananas, make banana bread. When life gives you chocolate, make chocolate and banana bread. There are only so many things you can do with bananas that are on their last legs, ive got a few different recipes that will help use them up without throwing them away. Look out for a recipe for ice cream in the next couple of days using just bananas as the main ingredient, yes its true! Today iv'e made a banana loaf with a difference. Your classic banana loaf is perfect enough, moist and sweet. But this version is even better, its moist, chocolaty and slightly bitter from the dark chocolate.
Bananas are naturally sweet so this recipe doesn't require that much sugar which is always a plus and it also thickens the mixture slightly. Even if your not a fan or have family members that are not fans of bananas then fear not as the flavour is not strong so they wouldn't even know that it was in there!

1 lb Loaf tin
Ingredients
4 Medium ripe bananas
115g Butter (melted)
120g Brown sugar
1 Large egg
1 tsp Vanilla extract
1 tsp Baking powder
Pinch of salt
140g Plain flour
60g Cocoa powder
50g Dark chocolate chunks/chips
Preheat the oven to 180 degrees, line and grease the loaf tin.
Mash the bananas in a large bowl, whisk in the melted butter, brown sugar, egg and vanilla extract. Sift in the flour, cocoa powder, baking powder and salt. Mix on a medium speed for 3 minutes so that all the ingredients are well incorporated. Add the chocolate chunks and mix on a low speed for one minute.
Transfer the batter into the prepared tin and place in the oven, bake for around 55-60 minutes or until a cake tester comes out clean. Cool in the tin for 10 minutes before transferring onto a wire rack to cool completely.
