I've said it before and I'll say it again, Blondies are my favourite all in one bake. They're like little nougats of gooey heaven that never disappoint. And the more melted caramel, the better. Which is just what you'll get with these Rolo Blondies. As the caramel melts, the blondies become gooier and the chocolate spreads into the Blondie mixture. You can even turn these Rolo Blondies into a dessert by serving them warm with either ice cream or custard!
Rolo Blondies
(Makes 9 large blondies)
16 Rolos
160g Butter, cooled melted
2 Eggs
255g Light Brown Sugar
200g Plain Flour
1 TBSP Vanilla Extract
1 Tsp Salt
Preheat the oven to 180C, Gas Mark 4.
Line and grease a 24cm x 24cm brownie tin.
In a large mixing bowl add the melted butter, eggs, vanilla extract and sugar and whisk together until well combined, this should take around three minutes.
Add in the flour and salt and whisk together until just combined.
Pour the mixture into the prepared baking tin. Place the Rolos in the mixture and pat them down into the blondie mixture, you will want to spread these apart.
Place in the oven and bake for 20 - 22 minutes. A skewer test can be done, in places with no chocolate. You will want them to be a little squishy.
Take out of the oven and leave to cool completely in the tin. Cut the Rolo blondies into nine big squares, or 18 smaller blondies.
