#WorldNutellaDay Nutella Cookies

Its been a crazy old few days and the realization that I only have less than three months to complete my dissertation is rather concerning and stressful especially when I have a million other things due in! So today has purely been dedicated to all things baking to take my mind off uni for a day as I feel im going to go slightly mad with all this work. Cookies are just so simple to make and really quick too which is a god send as it gave me half the day dedicated to baking and the other half concentrating on uni work and trying to evaluate what I have to do.. Looking at my desk and the amount of handouts and books on it looks like rather a lot of work!


So it's no lie that I love Nutella, iv'e said it enough in various blog posts and when I can use it I will! As its world Nutella day I thought I would share a really easy cookie recipe that uses both hazelnuts and Nutella its self. Nutella literally goes with everything especially pancakes so grab a pot in time for pancake day.
Equipment
Mixing Bowl
Wooden Spoon
Grease Proof Paper
2 x Baking Tray

Ingredients
150g Butter
80g Light brown sugar
80g Caster sugar 
2 Tsp Vanilla extract 
1 Egg
225g Plain flour
Half Tsp Bicarbonate of soda
3 Tbsp Nutella 
Handful of chopped hazelnuts

Preheat the oven to 180 degrees and place grease proof paper over the baking trays. 

In a mixing bowl put the butter, sugars, vanilla extract and the egg and beat with a wooden spoon until light and smooth. Sieve the flour and bicarb into the bowl and beat together with the butter mixture until well incorporated. Add in the nutella and hazlenuts and mix in with the cookie mixture.  

Take a golf size ball amount of cookie dough and roll into a ball, place on the baking tray and pat down. Do this until the mixture is used up. Make sure the cookies are at least 2cm apart as they will spread in the oven. Place in the oven for 8-10 minutes for soft cookies or 12 minutes for harder biscuit like cookies. Pop on a wire rack to cool once cooked. Grab a glass of milk and enjoy!
