Homemade Chips


Hello lovely people, I'm posting something a little different today to my usual baked goods as I wanted to share with you this accidental homemade chip recipe. I say accidental, it was more like 'What should I have for dinner? Oh my there is nothing to eat in this house... I know i'll have ham, egg and chips... oh wait there is no chips!' Do you get where I am going with this? So I made my own. There is no deep fat fryer involved or a chip pan so you wont smell like a greasy spoon. Bonus points. All you need is three simple ingredients, potatoes, olive oil and sea salt.
I love that you can make something from scratch with very few ingredients, there is something kind of humble about it. I also love creating food without having any direction of where it is going, I guess it is true that dishes that have been created without a recipe are often some of the best meals you will ever have. Back to the chips. I adore home made chips, they taste so much better and have that gorgeous golden brown colour that are ideal for dipping into ketchup! Come on, you can't have chips without ketchup. The olive oil adds a real sweet note to the chips and also helps cook them when in the oven. It is not as fattening as sun flower or vegetable oil so I will claim that these are healthy chips... The sea salt gives them a crunch and also adds to the overall flavour, I adore salty chips so the sea salt gives you big bursts of flavour compared to regular table salt.


This recipe makes enough for one portion however just up the amount of potatoes to suit your portion needs.

Ingredients
2 Medium sized white potatoes
Olive oil
Sea Salt

I left the skins on the potatoes but if you prefer skinless ones then peel the potatoes first before slicing them. Cut the potatoes in half and then half again, chop them into 1cm wide slices and then cut them into 1cm thick sticks.

Put a pan of water on to boil, once boiled place the chips and boil them for 10 minutes until they just start to go soft. It's important to make sure you keep an eye on them as you do not want them to go mushy, as they will just break up in the pan.

After 10 minutes, drain the chips off and place on a baking tray. Drizzle with a good glug of olive oil and sprinkle sea salt over them. Give the tray a shake to make sure all the chips are covered. Place in a preheated oven at 180 degrees C/Gas mark 4 for 20-25 minutes until golden brown. Mid way through cooking give them a shake to make sure they do not stick to the pan.

Once cooked sprinkle again with a little sea salt if desired.
