Monster Eye Cupcakes | Halloween Treat

Happy Hallows Eve! I've got another Halloween treat for you, monster eye cupcakes. I know, they are not the most scary looking things in the world, but they pack a chocolate punch. I wanted to make something using these edible eyes that I got for my birthday and as soon as I opened them I knew they would be good for a Halloween themed bake.
Like the meringue ghosts these are great for getting the kids involved. They can decorate them with the eyes of their choice and they can choose the colour of the frosting, a bright green frosting would work well with the monster theme. The base for these cupcakes is just plain chocolate, however with chopped up chocolate inside they are gooey and even more chocolatey which is great for the season of all things sweet.

Chocolate Cupcakes 
(Makes 12) 

75g Dark Chocolate
175g Plain Flour
30g Cocoa Powder
185g Caster Sugar
1/2 Tsp Bicarbonate of Soda
2 Eggs
120ml Coffee, Cooled
140ml Buttermilk
100ml Vegetable Oil

Vanilla Frosting
250g Icing Sugar
80g Butter, Room Temperature
2 Tbsp Milk
1/2 Tsp Vanilla Extract
Food Colouring Of Your Choice

Preheat the oven to 160 Degrees C and line a 12 hole cupcake tin.

Place the chocolate in a food processor and blitz into fine pieces. Tip it into a large mixing bowl and stir in the rest of the dry cupcake ingredients.

Whisk the wet ingredients together in a separate bowl and then gradually add to dry ingredients, whisk together until silky and smooth. Pour the mixture into a jug and then fill the cupcake cases just over two thirds full. Place in the oven and bake for 18 minutes. Once cooked transfer to a wire rack and leave to cool completely before frosting.

While you wait for the cupcakes to cool, place the butter for the frosting in a mixing bowl and beat on a slow speed until light and fluffy. Add in half of the icing sugar and beat for three minutes on a high speed. Add in the other half, milk, vanilla extract and the food colouring of your choice, (add in as little or as much to get the desired colour). Beat for a further three minutes.

When the cupcakes are cool, spread the frosting evenly over the cupcakes. Once all the cupcakes have been frosted place the edible eyes on to each cupcake. The design is up to you so make them as scary and hallo-weeny as you like!
