As you all know by now I love lemon and white chocolate together. It's just such a classic flavour combination that really works. And boy it works so well in these beauties. The lemon flavour is really taken on in these by the batter which makes for an extreme lemon smell which is phenomenal... if you like that kind of thing. The white chocolate almost sinks to the bottom creating this crunchy sweet layer that melts in the mouth.
Of course you can change it up and add any flavourings of your choice or you could add some nuts to give an extra layer of texture, macadamia nuts would be a great addition to these lemon and white chocolate Blondies.
White Chocolate and Lemon Blondies
225g Caster Sugar
4 Eggs225g Butter, melted
170g Plain Flour
100g White Chocolate Drops
Zest of One LemonJuice of Half a Lemon
Preheat the oven to 180C/Gas Mark 4. Line and grease a 20cm/8inch square cake tin.
In a bowl, beat together the sugar and eggs together until light and fluffy. Beat in the melted butter a little at a time, making sure that it is well incorporated before adding the next.
Add the sifted flour and carefully fold in using a mettle spoon. Add the white chocolate drops, zest and lemon juice and carefully fold them into the mixture.
Pour the brownie mixture into the prepared cake tin and level out, scatter over a handful of white chocolate drops. Bake for 30 minutes or until a skewer comes out clean. Take out of the oven and leave to cool in the tin before cutting into squares.
These look so good and look super easy to make too. I dont think I've made blondies before, totally need to give them a try! x
