Hey guys, I hope that you are now fully in the Christmas spirit because I know I am! Today after three weeks of take aways and ready meals the kitchen is finally being fitted. If you follow me on Twitter you may have seen pictures of boxes literally everywhere in my house of what will be a brand new kitchen in the Harris house hold. So finally no more trips to Ikea with mum 'ooing' over the kitchens. Trust me, once you've seen one kitchen unit, you've seen them all! I'll post some pictures up of the transformation once it's all done and I'm hoping it's done in time for Christmas because we don't even have a table... Anyhow, enough about that, I made these cute shortbreads just in time before we can't get back into the kitchen...
They are so simple to make yet pack so much flavour. We all know that lemon and white chocolate is possibly my most loved flavour combination so I wanted to make something that combined my flavour love. Shortbreads are always around my house at Christmas, as I'm sure they are at yours. I feel like they are a Christmas tradition, any one else agree? These can be served on the big day or leading up to it, they would also make a great present for someone if you wanted to go down the home made route, just grab a clear cellophane bag and some ribbon and you're away! Plus playing with glitter is fun.
Lemon Shortbreads
(Makes 16)
125g Butter
180g Plain Flour
Zest of One Lemon
Juice of Half a Lemon
65g Caster Sugar
Pinch of Salt
100g White Chocolate
Edible Silver Glitter
Preheat the oven to 150 degrees, Gas mark 4.
Cream together the butter and sugar until light and fluffy. Add in the lemon zest and juice and mix together until well incorporated. Sift in the flour and salt and mix together until a dough starts to form. Once you have a smooth dough roll into a ball and cover in cling film, place in the fridge for 20 minutes to firm.
On a lightly floured surface roll out the dough, around half an inch thick. Using a star shape cutter cut out stars and place them on a tray lined with grease proof paper . Once you have cut out as many stars as you can, place the tray in the fridge for a further 20 minutes.
Before placing in to the oven, prick the stars with a fork and lightly sprinkle with sugar. Place in the oven for 12 minutes until they just start to brown. Take out and transfer on to a cooling rack.
Once the stars are completely cool, melt the white chocolate to a pouring consistency. Dip half the star into the white chocolate so half of it is covered and then sprinkle over the glitter, place on a tray to set. Repeat this until all the stars are covered.
