Chocolate Fudge Muffins 🍫

I like to eat a chocolate muffin with a glass of milk. It's really the only time that I will have a glass of milk by it's self. So when this moment comes it's rather pleasant. I'm not sure what it is about the two but for me thats the only way to eat a chocolate muffin. Though saying that, when the muffin falls inside the glass then thats a whole different ball game. A little bit like when your biscuit falls inside your cup of tea... 'Mum me biscuits fallen in me brew' anyone get that reference?

To give my chocolate muffins some je ne sais qui I added some fudge pieces. I love fudge bars and these taste exactly like them. The fudge makes the muffins more squishy and moist, allowing them to soak up more milk or any beverage of your choice. What I love about these muffins is that they are super quick and easy to make so if you are craving something sweet and want to bake something that isn't going to take hours then these are for you.


Chocolate Fudge Muffins
(Makes 6) 

175g Plain Flour
25g Cocoa Powder
1 TSP Baking Powder
2 Large Eggs
100g Caster Sugar
4 TBSP Vegetable Oil
125ml Whole Milk
1 TBSP Golden Syrup
50g Chocolate Chips
50g Small Fudge Pieces

Preheat the oven to 160℃, gas mark 3.

Line a large muffin tin with muffin cases or cut out large squares of grease proof paper and place inside the holes.

Sieve the plain flour, cocoa powder, baking powder and sugar into a large mixing bowl.

Whisk the eggs, vegetable oil, golden syrup and milk together in a large jug.

Pour the wet ingredients into the dry ingredients and whisk together until well combined and smooth, this should take around three minutes.

Pour in the chocolate chips and the fudge pieces and mix together until well incorporated.

Pour the muffin batter into a large jug and equally pour the mixture inside the muffin cases, filling each one about three quarters of the way full.

Place inside the oven and bake for around 20 - 25 minutes.

Once cooked place the muffins on a cooling rack and leave to cool.

Alternatively you could leave them for five minutes and eat warm, because that is the best way to eat a homemade muffin!
