Mint Aero Cupcakes 🍫

With Easter just around the corner us chocolate lovers are in heaven. It's hard to not see an Easter egg when you hit the shops these days. In fact pretty much after Christmas they started to sneak in. But I won't get into that now.

Mint Aero's aren't an Easter special but they are just as delicious and make a perfect addition to a cupcake. With a rich chocolate cupcake, topped with mint buttercream frosting and a perfectly round mint Aero on top, these cupcakes make a great addition to any Easter party.

Aero Cupcakes
(Makes 12)

Party Ring Cupcakes 
(Makes 12) 

125g Self Raising Flour
125g Caster Sugar
125g Butter
1/4 TSP Bicarbonate of soda
2 Eggs
1 1/2 TBSP Whole Milk
3 TBSP Cocoa Powder
100ml Boiling Water

Decoration
1 Tub of ready made vanilla frosting
1 TBSP Peppermint Flavouring
Green Food Gel/Paste
12 Mint Aero Bubbles

Preheat the oven to 170℃, Gas Mark 4.

Line a cupcake tin with 12 cases.

Add the cocoa powder and boiling water together to form a chocolate paste. Leave to cool for ten minutes before adding to the cake mixture.

Place all of the cupcake ingredients inside a large mixing bowl and whisk together using an electric hand mixer until well combined and smooth. This should take around three to four minutes.

Equally distribute the mixture between the cupcake cases filling them three quarters of the way full.

Place the cupcakes in the oven for 18 - 20 minutes until golden brown or until an inserted skewer comes out clean.

Once cooked leave the cupcakes to cool in the tin for five minutes before transferring onto a cooling rack and leave to cool completely.

Whilst the cupcakes are cooling place the vanilla frosting, peppermint flavouring and enough food gel/paste to achieve a baby green colour into a small mixing bowl. Mix together until all the colouring has been incorporated. Place the frosting into a piping bag with a large round nozzle attached.

When the cupcakes are cooled place the piping bag in the middle of the cupcake and squeeze down allowing for the frosting to create a circle on top of the cupcake. Repeat this step until all the cupcakes are covered.

Place one mint Aero bubble on top of the frosting.
