As some of you may know I have perfected my cookie recipe so that they are the softest cookies in town. With that said, I've never had a go at making cookie bars, until now. I've seen cookie bars take over my Pinterest in the last month so I wanted to have a go myself. And so, my Maltesers cookie bars were baked.

With Maltesers spread throughout and extra chocolate chips added, these cookie bars are soft, gooey with a little bit of crunch on top. Cookie heaven at its best.

Maltesers Cookie Bars

(Makes 12) 

125g Butter
175g Caster Sugar
75g Soft Dark Brown Sugar
300g Self Raising Flour
1 Egg
1 Tsp Vanilla Extract
1/2 Tsp Salt
50g Dark Chocolate Chips
100g Maltesers Chocolate Spread 

Spoon small blobs of the Maltesers spread onto a lined baking tin and place it in the freezer until you need them later on.

Preheat the oven to 160℃, Gas Mark 3.

Line a 20 x 20cm square baking tin with grease proof paper.

Cream together the butter and sugar until light and fluffy. Add in the egg and vanilla extract and whisk together.

Sift in the flour and salt and mix together until well incorporated and stiff. Stir in the chocolate drops.

Pour the cookie mixture into the tin and press down.

Take the frozen Maltesers balls out of the freezer and place them equally in the cookie mixture, making sure that you press them down into the mixture.

Place in the oven and bake for 20 - 25 minutes until golden brown on top. You will want them to be gooey in the middle.

Once cooled, cut them into squares.

Can be enjoyed cold or hot with ice cream!
