Milky Way Cupcakes
Milky Way Cupcakes
(Makes 12)
75g Melted Dark Chocolate
175g Plain Flour
30g Cocoa Powder
175g Caster Sugar
1/2 TSP Bicarbonate of soda
2 Eggs
100ml Vegetable Oil
120ml Whole Milk
100ml Coffee, cooled
Frosting
150g Butter
300g Icing Sugar
50g Milky Way Bar, chopped into small pieces
12 Milky Way Crispy Roles
Preheat the oven to 170℃, Gas Mark 4.
Line a cupcake tin with 12 cases.
Sift the flour, bicarb, cocoa powder and caster sugar into a large mixing bowl.
Whisk the vegetable oil, milk, cooled coffee, eggs and melted chocolate together in a jug. Once the ingredients are well incorporated, gradually add the mixture to the dry ingredients. Whisk together until silky and smooth.
Pour the mixture into a jug and then fill each cupcake case just over two thirds full. Place in the oven and bake for 18 - 20 minutes, or until a skewer comes out clean.
Once cooked leave them in the tin for five minutes before transferring onto a cooling rack to leave to cool completely.
To make the frosting, place the butter into a mixing bowl and whisk until light and fluffy. This should take around five minutes.
Add in the icing sugar and whisk until light, fluffy and stiff. This should take around five - ten minutes.
Gently stir in the chopped Milky Way pieces.
Once the cupcakes are cool. Take a dollop of the frosting and use a pallet knife to spread it evenly across the top of the cupcake.
Repeat until all the cupcakes are covered.
Place two halves of a Milky Way role on top of each other on the cupcake.
Repeat until all the cupcakes are decorated.
