Rolo Cake Bars

I did it. One small step for man, one giant leap for mankind.. okay so I didn't walk on the moon or do anything spectacular but I did manage to drive to uni and back with no panic attacks! A small achievement but im hoping its the start of starting to get back to my normal self, whatever normal is? 


I made these cake bars last night because I was feeling like something chocolatey and comforting. Plus its just an excuse to drown my sorrows in cake, starting to sound like I am having a mental breakdown (can you call it that now?) or manic depression. I just needed a little pick me up of the chocolate variety. Now I love cake bars and with my mini loaf tin its perfect for making just that, I made my lemon drizzle bars with these tins and they went down a treat, so I thought sometimes you don't want a huge piece of cake.. Ok what am I saying? Of course you want a huge piece of cake, or maybe that's just me? Sometimes you just don't feel like a big piece of cake. These cake bars are perfect for a mid morning treat, yes chocolate cake is acceptable in the morning. Rolo's just add an extra layer, making them gooey and moist, What more could a girl ask for? .. That sounded so much better in my head, sounds like something rude.. maybe I should scrap that sentence?
Anyway.. here it is.

Equipment
Mini loaf tin or tray bake tin
Greaseproof paper
Mixing bowl
Wooden spoon

Ingredients 
30g Cocoa powder
6 Tbsp Boiling water
100g Butter or Margarine
275g Caster sugar
3 Eggs
125ml Milk
175g Self Raising flour
1 Tsp Baking powder
30g Fudge pieces
2 Packs of Rolo's

1. Grease and line the tray bake or if using the mini loaf tins grease. If possible get some mini loaf tin cases as this mixture is sticky once cooked it will stick to the tin - this happened to me the first time around and it wasnt pretty.

2. Preheat the oven to 180 degrees.

3. Put the cocoa powder into a large bowl - Use a good quality powder as this will make a difference to the flavour of the bars, I use Bournville - add the boiling water and mix until smooth.


4. Add the butter to the mixture and beat into the cocoa mixture. Once incorporated add all the other ingredients and mix well, the mixture will be quite wet. With the fudge chop into small pieces and mix into the cake batter. When it comes to the Rolo's chop a few into small pieces and add to the mixture. 

5. Pour the mixture into your lined tray or evenly contribute the mixture into the individual mini loaf tins. Cut the Rolo's in half and pop them on top on the mixture in the tins, push down so they are half in the mixture and half clear - this is so the chocolate does not burn inside the oven. 

6. Pop into the oven and bake for around 20-25 minutes. The mixture will be very moist because of the fudge so don't be put off that it is not cooked. Once cooked leave in the tin to cool for 10 minutes to rest before transferring on a wired rack to cool completely. If using loaf tins then leave the cake bars in there to cool completely before taking them out.
