I've fallen back in love with Sundays, after working them for four years they have finally come back to me and I've embraced them with a firm grip. Its just a day that is chilled out, although uni work is staring me in the face and procrastinating is a skill you develop very well at uni, so after this blog post im going to have my head stuck in books for a few hours. Fun, right? At least I've got the thought of going out for a roast with Jake later on keeping me going! Haven't had a good roast in ages, so looking forward to some decent gravy, that's the best part for me. Oh and pudding afterwards, can you tell I have a huge sweet tooth?
As you can see, I'm in for a fun few hours! Also.. I have a huge love for penguins.
With Halloween just around the corner it's sweets galore in every supermarket which isn't such a bag thing because everyone loves cheap sweets! These rocky roads are an alternative to sweets if you've forgotten to do a last minute rush to the shops to get sweets for trick or treaters or if you just fancy something extra with chocolate. Normally they are made with milk or dark chocolate but I wanted to use white chocolate as I love cranberries coated in white choc. You may see rocky roads as more of an Easter treat or maybe that's just me but they work all year round and what you add is really up to you which is great!
Equipment
1lb Loaf Tin
Saucepan
Wooden Spoon
Mixing Bowl
Clingfilm
Ingredients
250g White Chocolate
100g Shortbread
30g Marshmallows
35g Cranberries
1. Melt the white chocolate in the microwave or over a bowl of simmering water.
2. Break the shortbread into small pieces and place into a bowl. Then add the marshmallows and cranberries in with the shortbread.
3. Pour in the chocolate into the bowl and mix well. Line the loaf tin with clingfilm and pour in the mixture into the loaf tin. Cover with the clingfilm and place in the fridge for 2 hours to set.
4. Once set using a sharp knife cut into bite size pieces.
