Banana and peanut butter loaf

I've become a little obsessed with loaf cakes recently and for no apparent reason, other than the fact I love to cut myself a huge slice of whatever is up for grabs. Banana bread is a firm favourite and it's one that I love making but I wanted to spruce it up a little with some peanut butter. This bread isn't too sweet which allows the peanut butter to sit merrily alongside the bananas. I also added some chopped peanuts to the loaf to give it a crunchy texture.

Banana and Peanut Butter Loaf 
(Makes on large loaf) 

100g Butter
150g Soft Dark Sugar
2 Eggs
100g Smooth Peanut Butter
50g Salted Peanuts, chopped
250g Plain Flour
2 TSP Baking Powder
3 Ripe Bananas


Preheat the oven to 160℃, Gas Mark 3.

Line a 1KG loaf tin with grease proof paper.

Cream the butter and sugar together in a large mixing bowl until light and fluffy. Beat in the eggs and then add in the peanut butter and beat together until well combined and smooth.

And in the flour, baking powder and chopped peanuts to the wet mixture and beat together until smooth.

Mash the bananas together in a small bowl and then add them to the mixture. Fold them in gently and then pour the mixture into the prepared loaf tin.

Place in the oven and bake for around 45 - 50 minutes or until an inserted skewer comes out clean.

Allow the loaf to cool in the tin completely before slicing.
