A rich chocolate sponge, crammed with fudge pieces with a brown sugar frosting sprinkled with extra fudge pieces makes this a great cake to share on a rainy weekday evening. Add some cream and you've got yourself a party.
The brown sugar frosting has a natural fudge tone to it which makes it a great frosting to use for this chocolate fudge sponge. This cake would also make a great birthday cake as you can decorate the top with what you like!
Chocolate Fudge Tray Bake
50g Cocoa Powder
6 TBSP Boiling Water
2 TBSP Golden Syrup
100g Butter
275g Caster Sugar
3 Eggs
100ml Milk
175g Self Raising Flour
1 TSP Baking Powder
75g Fudge Pieces, small
Brown Sugar Frosting
100g Buter, softened
100g Light Brown Sugar
200g Icing Sugar
Fudge Pieces, small
Preheat the oven to 180℃, Gas Mark 4.
Line and grease a 12 x 9 inch tray bake tin.
Put the cocoa powder into a large jug and add in the boiling water. Mix until smooth. Pour in the golden syrup and stir until combined.
Place the butter and sugar into a large mixing bowl and beat together until light and fluffy. Pour in the chocolate mixture and beat until well combined.
Add in the flour, baking powder, eggs and milk and mix until combined, this should take around two - three minutes. Gently stir in the fudge pieces until they are equally distributed in the mixture.
Pour the mixture into the prepared tin and bake in the preheated oven for about 30 - 35 minutes or until an inserted skewer comes out clean.
Leave in the tin to cool completely, peel off the grease proof paper and place the sponge on a serving dish of your choice.
To make the frosting beat the butter and brown sugar together until light and fluffy. Add in half of the icing sugar and beat together until the mixture starts to become stiff. Add in the remaining icing sugar and beat until you have a stiff spreading consistency.
When the cake is cooled, spread the frosting over the cake equally. Then sprinkle over the fudge pieces.
Cut into squares to serve.
